These (Low Sugar) Peanut Butter Brownie Cheesecake Bites are quick and easy to make and perfect for a sweet, on-the-go snack. It's 6 simple ingredients, low in sugar, and high in protein.

How to make the Peanut Butter Brownie base:
I roughly used about 1/3rd of each granola bar per "base" cup. I simply just pressed it into the mini muffin molds until it filled out the mold and the two bars stuck together well (so easily liftable).
How to make the healthy cheesecake filling:
Simply whisk all ingredients together until smooth and creamy. Easiest recipe ever, am I right?! LOL

Using about 1/3rd of the dark chocolate cocoa granola bar, press it into half of one mini muffin mold. Use roughly 1/3rd of the peanut butter cocoa chip granola bar for the other half of the mold. Press down until it fills out the mold and the granola bars stick together well (should be easily liftable). Repeat with remaining granola bars.
In a large bowl, whisk the cream cheese, maple syrup, milk, and vanilla extract until smooth and well-combined.
Add a generous dollop of the cheesecake mixture into the center of each granola bar base.
Drizzle with melted chocolate and garnish with flaky sea salt (optional). Set aside in the fridge for 10 minutes, or until the chocolate is set. Enjoy!
