5-Minute Breakfast: Chili Crunch Egg Tostadas

It's crispy, cheesy, easy to make, high in protein, and all around flavorful with a few simple ingredients! I have these Chili Crunch Egg Tostadas at least 4x a week for breakfast they're so good.

What is a Tostada?

A Tostada is traditionally known as a deep fried tortilla topped with meat, cooked vegetables, and beans.

How to make Homemade Tostadas?

Traditionally, tostadas are made by deep frying tortillas. However, I have adapted the recipe to a 'shallow' frying process that only uses about 1 tablespoon of olive oil to save you money and ingredients 😉

What is Chili Crisp Oil?

Chili crisp is a condiment that consists of oil infused with peppers with a little crunch factor.

Where to find Lee Kum Kee Chili Crisp Oil?

I love using Lee Kum Kee Chili Crisp Oil that you can find on Amazon and Walmart!

Optional Toppings to Add to Egg Tostadas:

  • Sliced Avocado
  • Pickled Onions
  • Fresh Cilantro
  • Lime Juice
  • Sliced Spring Onions, or Scallions
  • Cotija Cheese
  • Honey, for a little hint of sweetness
  • Enchilada Sauce (warmed up beforehand)

Ingredients

Servings: 1

  • 1 Corn Tortilla
  • 1 tbsp. Olive Oil
  • 1 tbsp. Lee Kum Kee Chili Crunch Oil
  • 1 Egg
  • 1 tbsp. Shredded Mexican Cheese
  • Avocado, sliced, for garnish
  • Cotija Cheese, for garnish
  • Pickled Onions, for garnish
  • Fresh Cilantro, for garnish

Instructions

  1. Add the olive oil to a skillet over medium high heat to warm up for 1 minute. Add the corn tortilla and fry for 1-2 minutes on each side, until crispy and golden.
  2. Remove the tortilla and reduce heat to medium. Add Lee Kum Kee’s Chili Crunch Oil, then crack the egg directly on top.
  3. Add the shredded cheese along the edges of the egg.
  4. Cover with a lid to cook until desired doneness.
  5. Add the chili crunch egg to the crispy tortilla and garnish with your favorite toppings to enjoy!
