10-Minute Savory Breakfast Bowl
This savory breakfast bowl is simple, packed full of nutrition to keep you energized throughout your day, quick to make, and oh so satisfying!
Ingredients

- 1 2.5-oz Quinoa Cup (any flavor)
- 2 cups Spinach
- 1/4th Avocado, sliced
- 1/3 cup Cherry Tomatoes, halved
- 1-2 Eggs, cooked to personal preference (soft boiled, fried, scrambled)
- 1 tsp. Olive Oil
- (Optional) Feta Cheese Crumbles, or Nutritional Yeast
- Fresh Herbs, like parsley, chives, or basil
- Salt & Black Pepper, to taste
Instructions
- Microwave your favorite Keen One Quinoa Cup according to package directions, or add 1/2 cup boiling water to let stand for 8-10 minutes.
- Cook your eggs to desired preference.
- In a small skillet, heat the olive oil over medium high heat. Add the spinach and cherry tomatoes to cook until tender, about 2 minutes.
- Assemble breakfast bowl with the quinoa as the base, then the spinach, cherry tomatoes, sliced avocado, eggs, feta cheese crumbles, and fresh herbs. Add salt and black pepper to taste. Enjoy warm!
